Signs it's time to refinish
Spreading dark stains, a hollowed-out surface where the knife lands, a smell that lingers after washing — these are signs it's time. Shaving off a thin layer removes the scarred, stained surface and brings back a flat, clean face.
Cost and what to expect
At Yoshino Koumuten we refinish a board for roughly 500 to 1,000 yen. It varies with condition and size, but on a booked day we can sometimes return it in about 30 minutes. There's a limit to how many times a board can be shaved, but with care it can be refinished again and again over many years.
Daily care you can do at home
Good daily habits stretch the time between refinishes. Wash the board soon after use, wipe it dry thoroughly, and stand it up to air out. Avoid direct sun and the high heat of a dishwasher, which cause warping and cracks. Frequent washing and drying is gentler on wood than long soaks in bleach.
